Paneer Pasanda: A Classic Indian Dish with a Twist

Paneer Pasanda is a popular Indian dish that originated in North India, particularly in the states of Punjab and Uttar Pradesh. The dish is a variation of the traditional paneer dish, with a twist of rich and creamy gravy, making it a favorite among vegetarians and non-vegetarians alike.

What is Paneer Pasanda?

Paneer Pasanda is a vegetarian delicacy made with thick slices of paneer (Indian cottage cheese) stuffed with a flavorful mixture of paneer, spices, nuts, and raisins. The stuffed paneer slices are then shallow-fried until golden brown, and simmered in a creamy, tomato-based gravy. The dish is usually garnished with fresh cream, coriander leaves, and finely chopped nuts, which add to the overall taste and visual appeal.

Preparing Paneer Pasanda

The preparation of Paneer Pasanda involves a few steps, but the end result is worth the effort. The following is a simple recipe to prepare Paneer Pasanda:

Ingredients:

  • Paneer (Indian Cottage Cheese)
  • Onion
  • Tomato
  • Cashew Nuts
  • Raisins
  • Ginger-Garlic Paste
  • Green Chili
  • Cumin Seeds
  • Red Chili Powder
  • Coriander Powder
  • Turmeric Powder
  • Garam Masala
  • Salt
  • Cream
  • Butter/Oil

Instructions:

  1. Cut the paneer into thick slices, and marinate them in a mixture of ginger-garlic paste, red chili powder, turmeric powder, and salt. Set aside for at least 15 minutes.
  2. In a pan, heat some oil/butter and shallow-fry the marinated paneer slices until golden brown. Drain and set aside.
  3. In the same pan, add some more oil/butter and sauté finely chopped onions until golden brown.
  4. Add the ginger-garlic paste, green chili, and sauté for a minute.
  5. Add chopped tomatoes, cashew nuts, raisins, coriander powder, red chili powder, turmeric powder, and salt. Mix well and cook until the tomatoes are soft and mushy.
  6. Once cooled, blend the tomato mixture into a smooth paste.
  7. In a separate pan, add some butter/oil and cumin seeds. Once they start spluttering, add the tomato paste and garam masala. Cook for a few minutes until the gravy thickens.
  8. Add the fried paneer slices to the gravy and cook for a few minutes until the paneer is coated well with the gravy.
  9. Finally, add some fresh cream, coriander leaves, and finely chopped nuts on top for garnishing.
