  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, mashed
  • 1/2 cup walnuts, chopped (optional)

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with non-stick cooking spray.
  2. In a medium bowl, combine the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs and vanilla extract until well combined.
  4. Add the mashed bananas to the wet ingredients, and mix until well combined.
  5. Gradually stir in the flour mixture until just combined. Be careful not to overmix the batter, as this can result in a tough banana bread.
